Recipes That Help Me Survive the Busy Weeks
My sons and I got back from being away for almost a month this past weekend and jumped right back into busy life (plus the boys don’t start school until next week, so I’ve had them around a bunch). Which has meant that this week has been one of those weeks where your main priority is to just keep your head above water. As I have struggled to figure out what’s for dinner based our CSA for the week and the on the quick (read: not planned well) shop I did on Sunday, I have been deeply grateful for two things: my super-quick staple recipes and foods in my freezer.
So in honor of those foods, I wanted to share some of the recipes that have saved me this week.
From the Freezer:

Spinach Pesto. This would work with any green and I keep a stock of it in my freezer all the time.

Oatmeal Muffones. Also had some of these left in the freezer and two clients mentioned to me how much they love these this week, so I thought I’d share them again.
Quick and Easy Recipes:

Skillet Tomato Sauce. Made a big batch of this and pureed some and used it as pizza sauce this week. The rest actually went into the freezer for another time.

Protein-Packed Oven Pancakes. Made a batch of these the first morning we were back and put the rest in the freezer to use throughout the week.

Tostada Salad. This has been my lunch every day!

Black Beans. Ok. So maybe these aren’t quick when you make them, but then you’ve got a big batch to use for all kinds of quick meals and I don’t think we make it a week without these. I made a huge batch the first day we were back and we’ve used them for multiple meals and there’s now a whole bunch in the freezer.
