Cuisine Mediterranean, tunisian, Turkish
- 1 large red onion
- 1 tablespoon sumac
- 1 teaspoon salt or to taste
- 1 tablespoon lemon juice optional
- 1 tablespoon chopped parsley optional, for garnish
Prepare the Onion: Peel the onion and slice it into thin rings. For a milder flavor, you can soak the sliced onions in cold water for about 10 minutes and then drain them well.
Combine Ingredients: In a mixing bowl, combine the thinly sliced onions with sumac, olive oil, lemon juice, and salt. Mix well to ensure the onion slices are evenly coated with the seasonings.
Massage the Onions: Using your hands, gently massage the onion slices to soften them slightly and help the flavors meld together. This step also helps to release some of the onion’s juices, creating a more flavorful mixture.
Rest: Let the sumac onions rest for at least 10-15 minutes before serving. This will allow the flavors to develop and the onions to become slightly tender.
Garnish and Serve: If using, sprinkle chopped parsley over the sumac onions before serving. They can be served at room temperature or slightly chilled.
