  • 1 tablespoon sumac
  • 1 teaspoon salt or to taste
  • 1 tablespoon lemon juice optional
  • 1 tablespoon chopped parsley optional, for garnish

  • Prepare the Onion: Peel the onion and slice it into thin rings. For a milder flavor, you can soak the sliced onions in cold water for about 10 minutes and then drain them well.
  • Combine Ingredients: In a mixing bowl, combine the thinly sliced onions with sumac, olive oil, lemon juice, and salt. Mix well to ensure the onion slices are evenly coated with the seasonings.
  • Massage the Onions: Using your hands, gently massage the onion slices to soften them slightly and help the flavors meld together. This step also helps to release some of the onion’s juices, creating a more flavorful mixture.
  • Rest: Let the sumac onions rest for at least 10-15 minutes before serving. This will allow the flavors to develop and the onions to become slightly tender.
  • Garnish and Serve: If using, sprinkle chopped parsley over the sumac onions before serving. They can be served at room temperature or slightly chilled.
