<p class="wp-block-paragraph">You only need a few simple ingredients: apple cores, water, and sugar. This recipe hails from American cuisine and focuses on fruits.</p>



<p class="wp-block-paragraph">First, I save up my apple cores in a jar. When I have enough to fill about half the jar, I move on to the next step.</p>



<p class="wp-block-paragraph">Then, I dissolve 1/4 cup of sugar in 1 quart of warm, non-chlorinated water. Chlorinated water can mess up the fermentation process.</p>



<p class="wp-block-paragraph">After that, I pour the sweet solution over the apple cores until they&#8217;re covered. I cover the jar with a cloth and secure it with a rubber band to let it breathe.</p>



<p class="wp-block-paragraph">The mixture needs to sit in a warm, dark place. I usually leave mine for about 2-3 weeks, stirring occasionally.</p>



<p class="wp-block-paragraph">Once it smells like vinegar, I strain out the cores and transfer the liquid to a clean jar. I like to use this homemade apple cider vinegar in my salads and marinades.</p>

<p class="wp-block-paragraph">Baking is straightforward. I preheat the oven to 350°F and fill my lined muffin tin with the batter. It takes about 15 minutes for the cupcakes to turn a light golden brown and spring back when touched.</p>



<p class="wp-block-paragraph">The result is a batch of light, fluffy cupcakes with a citrus twist. Topping them with a simple lemon glaze or frosting makes them even better. These lemon zest cupcakes are a wonderful way to enjoy a sweet treat while making sure no lemon goes to waste.</p>

<p class="wp-block-paragraph">Pickled Chard Stems are a great way to use up those leftover stems after using the leafy part in other dishes.</p>



<p class="wp-block-paragraph">This recipe falls under the cuisine type of pickling, a simple method to preserve vegetables. The vegetables used here are Swiss chard stems.</p>



<p class="wp-block-paragraph">To start, I clean the chard stems and cut them to fit nicely into mason jars. In a small saucepan, I bring vinegar, sugar, salt, and some sriracha to a boil until everything is dissolved.</p>



<p class="wp-block-paragraph">I pour this brine over the chard stems, let it cool, then put lids on the jars and refrigerate.</p>



<p class="wp-block-paragraph">After waiting a couple of days for the flavors to develop, they are ready to enjoy. It&#8217;s simple and such a tasty way to reduce food waste.</p>



<h2 class="wp-block-heading">24. Sweet Potato Skin Nachos</h2>

<p class="wp-block-paragraph">I love making <a href="https://plantyou.com/sweet-potato-skin-nachos/" target="_blank" rel="noopener">Sweet Potato Skin Nachos</a> because they are a delicious way to use every part of the sweet potato. This dish fits well into American cuisine and focuses on vegetables, particularly sweet potatoes. Instead of tossing sweet potato skins, I turn them into crispy nachos.</p>



<p class="wp-block-paragraph">First, I preheat my oven to 400°F and line a baking sheet with parchment paper. I poke some holes in my sweet potatoes with a fork and bake them for about 50 minutes to an hour until they are tender. Once they cool a bit, I carefully remove the skins and set the sweet potatoes aside for another recipe.</p>



<p class="wp-block-paragraph">I then slice the sweet potato skins into squares. Next, I arrange them on the baking sheet, sprinkle them with a bit of oil, salt, and pepper, and bake them until they are crispy.</p>



<p class="wp-block-paragraph">For toppings, I like to use ground beef or <a href="https://balancedkitchen.com/2013/11/sweet-potato-black-bean-burgers/">beans</a>, shredded cheese, diced tomatoes, and green onions. Sometimes, I even add a dollop of sour cream or guacamole. It&#8217;s a flexible recipe, so you can use whatever toppings you prefer.</p>



<p class="wp-block-paragraph">These Sweet Potato Skin Nachos not only taste great, they make me feel good about reducing food waste. They’re a hit at gatherings and a fun way to get creative in the kitchen.</p>



<h2 class="wp-block-heading">25. Zucchini Core Fritters</h2>



<p class="wp-block-paragraph">I love making zucchini core fritters. They&#8217;re a delicious way to use up extra zucchini and avoid wasting food.</p>



<p class="wp-block-paragraph">This dish fits into the category of American cuisine. It&#8217;s packed with vegetables like <a href="https://balancedkitchen.com/2014/09/100-days-of-real-food-recipe-review-veggie-corn-chowder/">zucchini and corn</a>. I like adding green onions and herbs, which make the fritters fresh and flavorful.</p>



<p class="wp-block-paragraph">To start, I mix flour, breadcrumbs, salt, and pepper in a bowl. In another bowl, I lightly whisk eggs and add the grated zucchini and corn. Combining these mixtures gives the base for our fritters.</p>



<p class="wp-block-paragraph">I then heat some olive oil in a skillet. When it&#8217;s hot, I drop in the batter by heaping tablespoons, making small fritter shapes. They cook up quickly, turning golden brown.</p>



<p class="wp-block-paragraph">Zucchini core fritters are just the thing for a tasty, eco-friendly meal. My family loves them, and they never last long on the table.</p>



<h2 class="wp-block-heading">26. Melon Seed Milk</h2>

<p class="wp-block-paragraph">I discovered <a href="https://cook.me/recipe/melon-seed-milk/" target="_blank" rel="noopener">melon seed milk</a> during a lazy summer afternoon. It’s a refreshing drink from discarded melon seeds, reducing food waste in a delicious way.</p>



<p class="wp-block-paragraph">First, I collect seeds from melons like cantaloupe or honeydew. I rinse them thoroughly to remove any remaining fruit.</p>



<p class="wp-block-paragraph">I soak the seeds in water overnight. This softens them up and prepares them for blending.</p>



<p class="wp-block-paragraph">In the morning, I drain and rinse the seeds again. Then, I blend them with fresh water until smooth.</p>



<p class="wp-block-paragraph">After blending, I strain the mixture using a fine mesh sieve or cheesecloth. This removes any solid bits, creating a smooth milk.</p>



<p class="wp-block-paragraph">I sometimes add a touch of honey or vanilla for flavor. Melon seed milk has a light, nutty taste that&#8217;s perfect for drinking on its own or adding to smoothies.</p>



<p class="wp-block-paragraph">This drink is an excellent alternative to traditional dairy milk. Plus, using the seeds that would otherwise be thrown away makes it even more satisfying.</p>



<p class="wp-block-paragraph">In my kitchen, every bit counts. Making melon seed milk is a small step towards reducing food waste and enjoying every part of my food.</p>



<h2 class="wp-block-heading">27. Onion Skin Broth</h2>

<p class="wp-block-paragraph">Onion Skin Broth is an easy way to add flavor to your meals while reducing waste. This broth is a staple in many kitchens around the world, especially in cuisines that value sustainability and minimizing waste.</p>



<p class="wp-block-paragraph">I usually start by saving the skins of yellow onions. These give the broth a rich, amber color and a unique taste. You can also use the skins of red or white onions, but yellow onions are my favorite.</p>



<p class="wp-block-paragraph">To make the broth, I gather about a cup of onion skins. I also add other veggie scraps like carrot peels and celery leaves if I have them. I toss everything into a pot with about 4 cups of water.</p>



<p class="wp-block-paragraph">Next, I bring the water to a boil, then reduce the heat and let it simmer for about 30 minutes. This allows all the flavors to blend. Strain the solids out after cooking, and your broth is ready.</p>



<p class="wp-block-paragraph">This broth is perfect for soups, stews, or even as a base for sauces. It’s a great way to make use of something that would otherwise go to waste. Plus, it’s satisfying to know that you&#8217;re getting the most out of your vegetables.</p>



<h2 class="wp-block-heading">28. Radish Leaf Salad</h2>

<p class="wp-block-paragraph">One of my favorite sustainable recipes is Radish Leaf Salad. It&#8217;s such a simple way to reduce food waste using a part of the vegetable often thrown away.</p>



<p class="wp-block-paragraph">First, I wash the radish greens thoroughly. They can be pretty dirty since radishes grow in the ground. After washing, I dry them well.</p>



<p class="wp-block-paragraph">Then, I chop the radish greens into bite-sized pieces. They have a flavor similar to mustard greens or kale, a little peppery and fresh.</p>



<p class="wp-block-paragraph">Next, I toss the greens with some olive oil, salt, and pepper. For added flavor, I like to include some chopped garlic and a splash of balsamic vinegar.</p>



<p class="wp-block-paragraph">Sometimes, I add other fresh vegetables like tomatoes, cucumbers, or bell peppers. It&#8217;s a <a href="https://balancedkitchen.com/2015/02/simple-grain-salad-a-side-dish-without-a-recipe/">versatile salad</a> that pairs well with many dishes.</p>



<p class="wp-block-paragraph">Don&#8217;t forget to try it with your favorite salad dressing. I find that a creamy dressing or a simple vinaigrette goes perfectly with the sharpness of the radish leaves.</p>



<p class="wp-block-paragraph">Using radish leaves in a salad is a great way to reduce waste and enjoy every part of this wonderful root vegetable.</p>



<h2 class="wp-block-heading">29. Kiwi Skin Jam</h2>

<p class="wp-block-paragraph">Have you ever thought about making jam from kiwi skins? It’s a great way to use parts of the fruit that are often thrown out.</p>



<p class="wp-block-paragraph">I first tried this recipe when I realized how much of the kiwi&#8217;s nutrients are in the skin. Kiwi skins are packed with fiber and antioxidants. The jam has a slightly tart and sweet taste that&#8217;s unique and delicious.</p>



<p class="wp-block-paragraph">To make kiwi skin jam, I use the skins from about 10 kiwis. I start by washing the skins thoroughly. Then, I chop them into small pieces.</p>



<p class="wp-block-paragraph">In a pot, I combine the chopped skins with 2 cups of water and 1 cup of sugar. I let it simmer until the skins are soft and the mixture thickens. Sometimes, I add a little lemon juice to enhance the flavor.</p>



<p class="wp-block-paragraph">This jam is perfect on toast, in yogurt, or even as a topping for desserts. It’s a surprising twist that reduces food waste and adds a little something extra to my meals.</p>



<p class="wp-block-paragraph">Give it a try, and you’ll see how versatile kiwi skins can be!</p>



<h2 class="wp-block-heading">30. Corn Cob Stock</h2>

<p class="wp-block-paragraph"><a href="https://pinchandswirl.com/corn-stock/" target="_blank" rel="noopener">Corn cob stock</a> is a fantastic way to use leftover corn cobs. I love <a href="https://balancedkitchen.com/2016/02/homemade-stock/">making stocks at home</a> and this stock because it’s simple and helps reduce food waste.</p>



<p class="wp-block-paragraph">You need bare corn cobs, water, and some veggie scraps like onion or carrot. Pop them in a pot and cover them with water.</p>



<p class="wp-block-paragraph">I usually simmer mine for a good 45 minutes to an hour. It turns out golden and smells amazing. Strain it, and you’ve got a flavorful base for soups or risotto.</p>



<p class="wp-block-paragraph">Cooking up this stock makes me feel like I’m making the most out of my veggies. Plus, it’s a win for sustainability in my kitchen.</p>

<p class="wp-block-paragraph">But many people feel like they are incapable of making them well. </p>



<p class="wp-block-paragraph">The truth is, eggs are actually quite simple, they just need a little bit of attention. </p>



<p class="wp-block-paragraph">So today I want to break down for you the different ways to cook an egg so that you can add these to your rotation for breakfasts, lunches, and dinners and then next time I will talk about different ways to use eggs in baking (i.e., beating an egg in all its stages).</p>

<p class="wp-block-paragraph"><a href="https://balancedkitchen.com/2017/04/simplest-deviled-eggs/" data-type="post" data-id="1951">Hard-boiled eggs</a> are a lunchbox and breakfast-on-the-go staple for our family. I also use them for egg salad, deviled eggs, and sliced up on a salad.</p>



<h3 class="wp-block-heading"><strong>How to cook them</strong></h3>



<p class="wp-block-paragraph">Put the number of eggs you would like to hard-boil in a pot of cold water. </p>



<p class="wp-block-paragraph">Bring the pot of water to a boil. When it reaches boiling, take the lid off a set a timer for 10 minutes. </p>



<p class="wp-block-paragraph">When the timer goes off, pour the hot water down your kitchen sink and run the eggs under cold water for a few moments to cool them down. </p>



<p class="wp-block-paragraph">To peel them, knock them on their larger end, where there is likely an air bubble so that you can break through easily and get the shell off without losing too much of the white.</p>



<h2 class="wp-block-heading"><strong><u>Soft-Boiled Eggs:</u></strong></h2>

<p class="wp-block-paragraph">We love these for breakfast. I grew up with eggs cups where you would just take off the small top, sprinkle in some salt and pepper, and dip toast fingers into the yolk, before eating the white. </p>



<p class="wp-block-paragraph">My husband grew up scooping them out into a bowl. Both ways are delicious!</p>



<h3 class="wp-block-heading"><strong>How to cook them</strong></h3>



<p class="wp-block-paragraph">Bring a pot of water to a boil. Using a slotted spoon, gently place the eggs into the boiling water. </p>



<p class="wp-block-paragraph">Set a timer for 5 minutes. </p>



<p class="wp-block-paragraph">When the timer goes off, pour the hot water down your kitchen sink and run the eggs under cold water. Gently crack the eggs around the small top, open the top, and serve in your favorite way.</p>

<p class="wp-block-paragraph">Here is the no frills, super easy method we use in our house that constantly blows people away. </p>

<p class="wp-block-paragraph">Just as the egg white starts to solidify a tiny bit, use a spoon or spatula to break up the yolk and mix up the egg. Scramble to your level of dry-ness.</p>

<p class="wp-block-paragraph">Breakfast and dinner, unless we’re eating lunch at home and then they are a solid option then, too. </p>



<p class="wp-block-paragraph">For breakfast we’ll have them with toast, with eggs, or in a sandwich. </p>



<p class="wp-block-paragraph">For dinner we’ll have them on top of grains, mixed into pastas, or with toast.<br></p>



<h3 class="wp-block-heading"><strong>How to cook them</strong></h3>

<p class="wp-block-paragraph">When the white is solid but the yolk is still liquid-y, slide a thin spatula underneath the egg to gently lift it out of the pan to put it on your plate.</p>

<h3 class="wp-block-heading"><strong>How to cook them</strong></h3>



<p class="wp-block-paragraph">The first thing you need to know about making an omelet is that any fillings that you are going to put in that would need to be cooked, need to be cooked before you start making your omelet. </p>



<p class="wp-block-paragraph">So any <a href="/how-to-caramelize-onions" data-wpil-monitor-id="1000014">onion</a> or vegetables that you wanted sautéed, sauté them first, or better yet, use leftovers! I love leftover <a href="https://balancedkitchen.com/2024/05/indian-spiced-roasted-vegetables/" data-wpil-monitor-id="1000015">roasted vegetables</a> in an omelet (or frittata! See below). </p>



<p class="wp-block-paragraph">Grated cheese or sliced up cooked/deli meat are also good additions. So once you have your fillings prepared and ready to go, crack two eggs into a bowl and beat well, until it is completely blended, no clear whites left. Salt and pepper the beaten eggs.</p>



<p class="wp-block-paragraph"> Melt 1 Tablespoon of butter in an 8-inch frying pan over a medium-high heat. Swirl the butter around so that the whole bottom of the pan in coated. If you need to add a little more butter, go ahead and do that. </p>



<p class="wp-block-paragraph">Once the butter has stopped sizzling, pour your eggs in. </p>



<p class="wp-block-paragraph">Gently use a spatula to move the eggs around a little bit (it will look sort of like waves), so that they are evenly distributed across the pan. </p>



<p class="wp-block-paragraph">Cook for 1-2 minutes, or until the edges look crisp but the middle is still kind of wet, but not flowing liquid. Place your fillings in the middle and fold over either in half to make a half-circle or in thirds. </p>



<p class="wp-block-paragraph">Gently slide the omelet off onto a plate. Don’t worry if the middle isn’t completely solid, it will still keep cooking off the heat. </p>



<p class="wp-block-paragraph">Serves 1-2 people, increase number of eggs and size of pan as necessary. And, if it all falls apart, then just scramble it up and serve as loaded scrambled eggs! </p>

<p class="wp-block-paragraph">Anytime! They are amazing hot or room temperature.</p>



<h3 class="wp-block-heading"><strong>How to cook them</strong></h3>



<p class="wp-block-paragraph">Pre-heat the oven to 400. Pull out a 10-12” oven-safe skillet. </p>



<p class="wp-block-paragraph">Prepare whatever mix-ins you are going to include, some of our favorites are onion/shallot, bell peppers, asparagus, roasted vegetables, chopped up leftover meat, grated or crumbled cheese. You want about 3 cups total of filling. </p>



<p class="wp-block-paragraph">If the fillings need to be cooked, like raw vegetables, melt some butter in the skillet and sauté them until they are ready. While the filling is cooking, crack six eggs into a bowl and beat well. Salt and pepper the filling to taste. </p>



<p class="wp-block-paragraph">Add any other fresh or fried herbs or seasonings you like to filling (oregano, basil, thyme, rosemary, chili powder, garam masala, and za’atar are some of our favorite options). </p>



<p class="wp-block-paragraph">When the filling that needs cooking is cooked, add any others you were going to add in and then spread it all out evenly. Sprinkle the cheese over (if using) and then pour the eggs on top. </p>



<p class="wp-block-paragraph">Cook on the stove for a minute until just beginning to set and then put into the oven for 8-10 minutes. To check if it is done, use a sharp knife to cut a tiny hole in the middle. </p>



<p class="wp-block-paragraph">If egg runs it, put it back in for a minute. If not, then it is done and pull it out. </p>



<p class="wp-block-paragraph">Let it sit for 5 minutes and then serve!</p>

<p class="wp-block-paragraph">I want to start this post with one of the funniest cooking stories I have ever heard. </p>



<p class="wp-block-paragraph">One night a friend of mine and her husband, who were not very experienced cooks, decided that they wanted to cook a really special meal. So they went through all of their cookbooks, found the recipe they wanted to make, wrote down all of the ingredients, and set off for Whole Foods. I</p>



<p class="wp-block-paragraph">t took them a while to find all of the ingredients, going up and down every aisle multiple times, and in the end there was still one ingredient that they just couldn’t find anywhere. They looked in the spice section, the dairy section, everywhere. </p>



<p class="wp-block-paragraph">Finally they went to customer service and asked where the “minus” (which they pronounced “meenus”) could be found. The man behind the desk had no idea what “minus” was, so he looked it up on the computer with no luck. </p>



<p class="wp-block-paragraph">They were irate. Here they were, trying to cook, trying to make a nice meal, they had come all the way to the “fancy” grocery store only to find it didn’t carry an essential ingredient?! Unacceptable! </p>



<p class="wp-block-paragraph">Finally they decided to just try the recipe without the “minus” since they only needed two tablespoons of it anyway. As they left Whole Foods with their groceries, though, they were still grumbling about what kind of grocery store doesn’t have an ingredient like “minus”?! </p>



<p class="wp-block-paragraph">When they got home and looked at the recipe again they realized that the recipe had called for “1 cup of flour, minus 2 tablespoons” but it just so happened that the “minus 2 tablespoons” was on the next line in the ingredient list.</p>



<p class="wp-block-paragraph">When I heard this story I couldn’t stop laughing, but I also realized that this was an amazing example of how confused and flustered we can feel when we are looking at a new recipe, especially a relatively complicated one. </p>



<p class="wp-block-paragraph">For a lot of cooking, I find that measurements can be relatively approximate, but when we are <a href="https://balancedkitchen.com/2016/05/cooking-101-how-to-read-a-recipe/" data-wpil-monitor-id="1000012">trying a new recipe</a> or if we are relatively new to cooking, having things be precise can be reassuring and helpful so I wanted to share some tips on measuring and also some equivalencies that can be really helpful to know for those times when you run out of clean measuring cups and spoons.</p>

<h2 class="wp-block-heading"><span style="text-decoration: underline;"><strong>Tips for Measuring Dry Ingredients:</strong></span></h2>



<ul class="wp-block-list">
<li><strong>Scoop, then scrape.</strong> When measuring things like flour the best way to get the most accurate measurement is to scoop up the ingredient until it is just a bit overfull and then use the back of a knife to gently scrape the excess back into the container. This will prevent over-packing a measuring cup.</li>



<li><strong>Use scraping edges when provided.</strong> If your baking soda or baking powder containers offer a flat edge near the top of the container, that is for scraping the measuring spoon to be level.</li>



<li><strong>Use measuring cups for dry ingredients whenever possible.</strong> While you can use liquid measuring cups, it is much easier to scrape the excess off using a dry measuring cup.</li>

<h2 class="wp-block-heading"><span style="text-decoration: underline;"><strong>Tips for Measuring Wet Ingredients:</strong></span></h2>



<ul class="wp-block-list">
<li><strong>Use a liquid measuring cup whenever possible.</strong> While you can use a <a href="https://balancedkitchen.com/2016/04/kitchen-organization-and-taking-chances/" data-wpil-monitor-id="1000013">dry measuring cup</a>, you will need to fill it all the way to the very top and risk spilling, whereas a liquid measuring cup gives you room at the top.</li>



<li><strong>Put your liquid measuring cup on a level surface and squat down to make sure that the measurement is accurate.</strong> Looking from above can distort your view.</li>



<li><strong>Make sure the top of the liquid meets the measurement line.</strong> If it is just under the line, then it is not enough.</li>
</ul>



<h2 class="wp-block-heading"><span style="text-decoration: underline;"><strong>Measurement Equivalents/Conversion:</strong></span></h2>



<p class="wp-block-paragraph">I can’t even tell you how many times I have gone to get a measuring cup or spoon of a certain size only to find that the one I need is dirty. It took me years to memorize these equivalencies and I still have a cheat sheet posted on the inside of my cabinet that holds my baking supplies.</p>

<p class="wp-block-paragraph">I don’t know about in your house, but in my house summer is also a time of voracious eating! The kids are so active whether at home or at camp that they get really hungry. Really hungry. With that kind of clamoring for snacks, it can be tempting to just fall back on the pre-packaged snack foods that are so convenient.</p>



<p class="wp-block-paragraph">In trying to figure all of this out for my family, I have decided that it is important to&nbsp;<strong>try to maintain the snack and mealtime structure</strong>&nbsp;we have during the school year.&nbsp; I try to stick to our snack routine to make sure that the mealtimes are still the main focus. For us that means a&nbsp;<em>small</em>&nbsp;mid-afternoon snack (now that my kids&nbsp;are older the mid-morning snack has disappeared&#8211; at least on most days), which always includes either a fruit or a vegetable, or both. Recently, that hasn&#8217;t been cutting it for my 9-year-old in the late afternoons, so I have told him that he can eat as many fruits and vegetables as he wants between afternoon snack and dinner. That way, he can munch away and I don&#8217;t need to worry about empty calories. Win-win! That being said, however, I do think it is important not to get so bogged down in the rules that we forget to have fun and relax. Afterall, we want our kids to have a healthy and happy relationship with food, rather than a rigid one, so there is&nbsp;<strong>definitely a time and place for flexibility and ice cream!&nbsp;</strong></p>



<p class="wp-block-paragraph">Here are some of our fun, favorite, simple snacks that help us make it through the summertime snack attacks:</p>

<p class="wp-block-paragraph"><strong>Watermelon</strong>: In slices, in chunks, or quickly pureed for watermelon water. This cooling, refreshing, and rehydrating treat is a go-to in our house.</p>

<p class="wp-block-paragraph">What’s the first thing you do when you start to cook? Do you pull out all the ingredients? Do you grab the pots and pans you will need? Do you call the pizza guy?</p>



<p class="wp-block-paragraph">For many people, the first step they think of when it comes to cooking is prepping all of the ingredients. Chopping all the vegetables, preparing the protein, maybe even measuring out the dry and liquid ingredients. Doing all of this before you start the actual cooking is called <em>mis-en-place</em> and if you are cooking this way, then, in my humble opinion, you are doing things wrong. Ok. Not wrong, per se, but inefficiently. And it is not your fault! This is how recipes are written (even mine). This is how many of us were taught to do things. Why? Because this is the standard practice in restaurants. For them, it makes sense. They prep all of the ingredients so that when an order comes in, they can just grab and start cooking. Plus they have assistants to do all the chopping, grating, measuring for them.</p>



<p class="wp-block-paragraph">But for us, a different approach tends to work better and that is what I call tandem cooking. By that I mean that instead of doing all the prepping and then all the cooking, the approach should be prep, start cooking, prep some more, continue cooking, and so on. For some people this can feel a bit overwhelming at first because they aren’t sure that they are fast enough at the prep side of things. What I tell people is that with a little bit of pre-planning before you get started, you can map out an approach (given your own pace of prepping) that will make it possible for you to prep and cook at the same time, and save a whole lot of time in the process! Here’s what it looks like:</p>

<p class="wp-block-paragraph"><strong>Step 1: Read &amp; Plan.</strong> Read the recipe. Carefully. Think through the steps that you are going to be taking. Is there a first step where an ingredient or two needs to cook for 5 or 10 minutes? Then use that 5 or 10 minutes to prep the next set of ingredients, rather than standing at the stove stirring constantly. Is there a time when things will be simmering for 20 minutes? Then that might be a great time to pull out and prep the final ingredients. Whatever the case, just come up with a plan that feels doable and fluid.</p>



<p class="wp-block-paragraph"><strong>Step 2: First Stage of Prep. </strong>Pull out the first ingredients you will need. Prep them.</p>



<p class="wp-block-paragraph"><strong>Step 3: Start Cooking. </strong>Heat up the oil, start the water boiling, get that first stage of cooking going.</p>



<p class="wp-block-paragraph"><strong>Step 4: Prep Some More. </strong>It may be only two stages of prep, it may be more. If you need to stir from time to time, great. If you are worried you might forget, set a timer.</p>



<p class="wp-block-paragraph"><strong>Step 5: Cook Some More. </strong></p>



<p class="wp-block-paragraph"><strong>(Step 6: Continue as Needed.)</strong></p>



<p class="wp-block-paragraph">And that’s it! This approach may take some getting used to, but I promise that once you’ve done it a couple of times you will be astonished by how much time it saves you and how much more natural it feels to be in the kitchen.</p>

<p class="wp-block-paragraph">For our second installment of the Cooking 101 series one reader asked that I talk a bit about heat levels on the stove and cooking speed. She said that she has always wondered what the different levels mean and how to know if you are doing it right.</p>



<p class="wp-block-paragraph">So let’s dig in!</p>

<p class="wp-block-paragraph">The first thing that is important to note is that many stoves nowadays have <strong>different burners that have different levels of power</strong>. Usually you have one or two that are the most powerful and is labeled with a term like “power boil” or “high output.” These are the burners that you are going to want to use for bringing things to a boil, frying, and cooking on high. These burners are not good for low and slow simmering as usually their lowest setting will leave your food cooking just a little too fast. Then there is usually one burner that is less strong and labeled something along the lines of “low output” or “simmer.” This is the burner you are going to want to use if you are supposed to cook something at a simmer for a long period time or if you are going to want to cook something on low. This burner will not be good for the higher heat cooking because either it will take a much longer time (like bringing a pot of water to a boil) or it just won’t get hot enough.</p>



<p class="wp-block-paragraph"><strong>But what if a recipe goes through different levels of heat?</strong> Let’s say a recipe asks you to start out on a higher heat to bring something to a boil and then turn it down to a low heat. Usually, all of that can be done on one burner. For these, I tend to use my stronger or medium level burners and follow the recipes directions for high heat, medium-high heat, or low-heat. I do not use my low-level burner for these.</p>



<p class="wp-block-paragraph"><em>A note on electric stoves:</em> electric stoves can be really tough when you need to change heat levels as they are much slower to respond than gas stoves are. So, one trick is to use different burners. For instance, if you need to first sauté something and then turn it to low or bring something to a boil and then turn it down to a simmer, start with one burner and then switch to another for the low part.</p>



<p class="wp-block-paragraph"><strong>Ok, but what do those heat levels mean? </strong>So here’s my rule of thumb for the different heat levels, but please know that everyone’s stoves are different so there may be some testing out that you need to do.</p>



<p class="wp-block-paragraph"><strong>High Heat:</strong> right at the top of the heat level. This is what you will use for bringing liquids to a boil and getting the heat up quickly.</p>



<p class="wp-block-paragraph"><strong>Medium-High Heat:</strong> This is usually around the mid-point on the dial. The idea here is that you still want the food to be cooking quite quickly, but not so quickly that it is burning and not so hot that the oil starts to smoke. This is likely where you will do a lot of your cooking such as sautéing, browning meat, and frying.</p>



<p class="wp-block-paragraph"><strong>Medium Heat:</strong> This is usually about 2/3 of the way around towards Low. This is for a gentler cooking. This is where you will likely put the dial when vegetables need time to soften or when you want a rapid simmer.</p>



<p class="wp-block-paragraph"><strong>Low Heat:</strong> This is all the way around on the dial. This is where you simmer.</p>

<p class="wp-block-paragraph">The other thing I will say about this topic, is that, like many things in cooking, <strong>over time and with practice you will start to get a sense of things</strong>. Maybe you will notice that your onions are browning too quickly, then you’ll know to turn it down a little more next time. Or maybe you’ll find your sauce didn’t reduce as quickly as they said it would, then maybe you need to crank it up a bit to a faster simmer next time. For me, there were many times when my onions got too browned, the sauce stuck to the bottom of the pot, and the rice didn’t fully cook and it was usually that my heat was cranked up too high (yes, I have an impatient streak), so I had to learn to slow things down.</p>

<p class="wp-block-paragraph">In a week full of the deepest and most profound of fears, I didn’t know whether to be proud of my son or worried for his health when he refused to eat the food at the hospital this week. Yes, the hospital. After three days of what we thought was a stomach flu, we ended up in the ER and then eventually Children’s Hospital where it was discovered that not only did he have appendicitis, but that his appendix had ruptured. All in all, a terrifying experience. I knew we had an additional challenge on ours hands when he took his first sip of the chicken broth he was allowed on a clear liquid diet and declared that he would stick to juice. I then offered him jello and popsicles, still no interest. To him, they all tasted “disgusting.” At first I thought that perhaps he was just not feeling up to the food, so I took a little taste of the broth and found that it was, in fact, disgusting. It didn’t taste real, it tasted like chemicals.</p>



<p class="wp-block-paragraph">The other challenge we came across was feeding ourselves because, sadly, the food offerings for families were not that much better. To be fair, I did see signs of the hospital working to get better at it, but for the most part the offerings were pretty grim.</p>



<p class="wp-block-paragraph">There’s a whole tirade here that I could go on about how I can’t understand how we expect people to heal in the hospital if we are not offering them good, nourishing foods, but, as you know, one of my goals on this blog is to offer up reasonable, manageable solutions that can help right now. So I wanted to share with you some of the work-arounds we came up with that helped all of us to get the nourishment we needed to take on the stress of what we were facing. These lessons would come in handy if, God forbid, you were to find yourself hanging out in a hospital, but they are also applicable to traveling, hanging out in a shopping mall, or just generally when you find yourself somewhere without the healthiest options.</p>



<p class="wp-block-paragraph">First of all, and important note on being kind to yourself. These are the times when we just need to be at peace with the fact that the offerings aren’t ideal and that it is outside of our control. That being said, while the donut, hamburger, and fries, may sound awesomely comforting—and maybe you need that kind of comfort for one meal— in the interest of feeling your best and clearest that you can, seeking out the best options possible is worth it. So how did I do that?</p>

<p class="wp-block-paragraph"><strong>When possible, bring from home.</strong> When my son wasn’t eating any of the hospital food, I called for reinforcements in the form of friends who cook and within two hours he was sipping homemade broth with a contented smile on his face. Similarly, my husband (who was the one going back and forth from home to the hospital to care for our younger son) put together meals from what we had at home and my in-laws brought a homemade dinner in one night as well.</p>

<p class="wp-block-paragraph"><strong>In the cafeteria, look for color and compromise.</strong> Whenever I went down to the cafeteria I tried to look for options that were <em>good enough</em>, which often meant having one thing that was less than ideal, supplemented by extra fruit or vegetables. A bagel and cream cheese and some cut up pineapple. Pretzels, hummus, and a bowl of soup. To help me in my quest for healthier options, I tried to find options that had color (and by that I mean natural color not red #5), so fruit, vegetables, or foods made with fruits and vegetables, such as soup, veggie burgers, and veggie pizza. For my son, once he was allowed solid foods we tried a couple of different meals and he either wouldn’t touch them or would take a bite and then refuse to have more, but he was always willing to have fruit. So we let him focus on fruits and vegetables: apples, watermelon (from home), and green salad, and just trusted that once we got him home the carbs and protein would follow, and we were right! Within an hour of being home from the hospital he had eaten TWO homemade scones!</p>



<p class="wp-block-paragraph">What it comes down to is that, for me, this experience was a lesson in letting go. In accepting that I can’t control it all and then doing the best I can with what I’ve got. And if, God forbid, I ever find myself having to spend lots of time in the hospital again, I will be sure make due with what I’ve got, ask for help, and bring food from home whenever possible.</p>

<p class="wp-block-paragraph">This month’s <a href="https://thereciperedux.com/" target="_blank" rel="noopener">The Recipe Redux</a> challenge is one that is near and dear to my heart (and actually a topic that you may have heard me talk about before):</p>



<p class="wp-block-paragraph"><em>In honor of Earth Day on April 22, we’re challenging ReDux members to show how they reduce food waste. Whatever you would normally toss, use it up. Share tips for reducing food waste in meal planning, prep or using up scraps.</em></p>



<p class="wp-block-paragraph">There are so many reasons, from environmental to financial, why reducing food waste is a great goal and if I am being totally honest, it is an area that is still a work in progress for me. While I almost never let cooked food go to waste, I struggle with what to do with all of my vegetable scraps since I don’t have a yard big enough for a compost bin. Some of them I store in gallon-sized freezer bags to use when I make vegetable or chicken broth, but often times those bags (yes, there is more than one) reach capacity and so then I end up tossing peels, ends, and cores—and feeling guilty about it every time. Not very productive, I know.</p>



<p class="wp-block-paragraph">So, if you are like me and throwing food away makes you crazy, here are some ways to at least start reducing food waste that have worked for me. And, please, please, please share your tips and tricks in the comments so we all can benefit!</p>

<ol class="wp-block-list">
<li><strong>Keep ends of bread or stale bread in a freezer bag to be used for breadcrumbs.</strong> When you find yourself facing those straggler pieces of bread that you know no one will ever eat, rip them up into small pieces and toss them in the bag. Then, when you have a need or when you have some time when you’ll just be kicking it around the house, pour the bread pieces out on to a cookie sheet and put it in a 200 degree oven. Let them slowly dry out in the oven for 45 minutes to an hour, or until all the pieces are super dry, then throw them into your food processor and run it until you have bread crumbs! I do this from time to time and then store them in a sealed jar in my pantry to use as needed.</li>



<li><strong>Keep vegetable scraps in freezer bags for making homemade broth. </strong>I do this with onion peels, green onion stalks, carrot and celery ends, the stems from greens, mushroom tips, etc. When you want to make the broth, just throw them in a pot, fill with water until just covering the scraps, toss in some bay leaves, thyme, salt, and pepper. Bring it all to a boil, then turn down to low and simmer for as long as possible, at least 2 hours. Strain and save for your recipes. I like to save mine in 4-cup portions since that is the most often needed amount.</li>



<li><strong>Throw parmesan rinds into soups.</strong> Just fish them out when the soup is ready. This will add a depth of flavor and works especially well with minestrones and pureed vegetable soups.</li>



<li><strong>Turn your potato or sweet potato peels into crisps!</strong> The skin is where many of the nutrients are stored, so tossing these always makes me sad. But no more! These nutrient-packed snacks are so simple, so good, and can be changed up easily by tossing in a spice of choice (chili powder, garam masala, cinnamon, etc.). Here’s the super simple recipe:</li>

Line a baking sheet with parchment paper or a silicon mat. Place all of your potato or sweet potato peels on the baking sheet and drizzle with olive. Sprinkle with a littlee bit of salt, pepper, and any spice you feel like using (chili powder, curry powder, garam masala, cinnamon, za’atar, etc.). Toss gently with your hands to make sure all the peels have oil and spices on them. Make sure the peels are spread out in a single layer. Bake for 10 minutes, then give them a stir and check for doneness. If they need more time, set a timer for another 3-5 minutes and check again. Mine usually take about 15 minutes total.</div></li></ul></div></div>

<p class="wp-block-paragraph">My oldest son is turning nine (!!) this week and over the past couple of months my husband and I have started to notice a pattern: sometimes there isn’t enough food on the dinner table. We haven’t yet reached the run-to-the-fridge-to-scrounge-up-more-food levels yet, but we have definitely hit the oh-no-there-won’t-be-enough-leftovers-for-lunch-tomorrow levels. The amount that I have been making over the past few years (which, by the way, is definitely enough food for a family of four, plus leftovers) is just not cutting it, especially on soccer practice days. Just yesterday, for example, I made 13 baked chimichangas and then had to dash out before dinner to get to a meeting. When I got home, there were only three left. Not only had the three of them eaten <u>10</u> chimichangas, but they weren’t even sure how it had happened! Where did all that food go?! I knew this time would come, what with having two boys and my husband coming from a long line of big eaters, but I did not expect it to arrive when my kids were six and eight (what is it going to be like when they are 12 and 14?!).</p>



<p class="wp-block-paragraph">Because of this uptick in food consumption I have definitely noticed that our grocery bills have started to creep up a bit and so I am starting to be even more diligent about using some of the techniques I saw my mom put into place when I was growing up. My mom is a serious pro at these things. Family friends always talk about how amazing it was to watch my mom feed huge groups of people with what appeared to be very little food. So whether you are just trying to cut down on your food bills, you are hoping to save up for a summer vacation, or you have some other fun plans for a little extra dough, here are some tricks to feed the hoards without breaking the bank:</p>

<p class="wp-block-paragraph"><strong>1) Beans and legumes need to be a staple.</strong> They are a cheap and easy protein source, incredibly flexible, and very filling because they are so packed with fiber. So if you need to expand the offerings on the table, go for another vegetable side or make that salad bigger. If you want to make a sauce go farther, double the vegetables.</p>
