<p>When I think about comfort food, one of my favorites is a warm bowl of Tunisian soup with chicken and vegetables. This soup blends flavorful spices with hearty ingredients, creating a meal that&#8217;s satisfying and nutritious. Tunisian soups often combine chickpeas, fresh vegetables like carrots, zucchini, chicken and herbs.</p>



<p>I grew up eating this soup, almost on a weekly basis. Still, I was surprised that both my kids liked it and also consider it one of their favorite dishes.</p>



<p>Cooking this soup fills my kitchen with inviting, aromatic spices like paprika and turmeric, which add depth to the broth. The use of fresh ingredients not only enhances the taste but also provides essential nutrients. <h2 class="wp-block-heading">What Goes In My Tunisian Soup?</h2>



<p>When making a Tunisian soup with chicken and <a href="https://balancedkitchen.com/2015/04/slow-cooker-spring-vegetable-minestrone/">vegetables</a>, a balance of chicken, veggies, and spices creates rich flavors. Each ingredient adds a unique touch, and there are always options if you need to substitute.</p>



<h3 class="wp-block-heading">Chicken</h3>



<p>I like starting with chicken as it provides a solid base for the soup. You can use either drumsticks or thighs. I truly believe that Boiling with bone-in chicken pieces also imparts more flavor, but it’s perfectly fine to use boneless, especially for convenience. </p>



<p>If you&#8217;re vegetarian or just cutting back on meat, this soup is so rich with vegetables, spices and herbs that it will taste amazing either way.</p>



<h3 class="wp-block-heading">Vegetables</h3>



<p>The vegetables in this soup are crucial for that hearty feel. I like to start with a base of onions, celery and carrots, also known as Italian Soffritto. Cooking them until the onions are a little golden and the carrots slightly tender.</p>



<p>With vegetables, the more variety, the merrier, so don’t shy away from using what’s fresh and available. </p>



<p>My usual mix include, zucchini and butternut squash or pumpkin. I might add turnip, potatoes or other roots if I find fresh ones. </p>



<h3 class="wp-block-heading">Chickpeas </h3>



<p>I never skip chickpeas for this soup. Using dried chickpeas adds a traditional touch to the soup. You’ll need to soak them overnight and then simmer them until they’re tender. This method takes time, but it allows you to control the texture and flavor completely.</p>



<p>On the other hand, canned chickpeas are convenient and quick. They’re already cooked, so you just need to rinse them and add them to the soup. They may be slightly softer, but they’re a perfect choice when you’re in a hurry.</p>



<h3 class="wp-block-heading">Spices</h3>



<p>Spices set Tunisian soups apart. Turmeric, cumin, and paprika are staples that I always include. These spices offer warmth and a slight earthiness. Cayenne pepper adds a nice kick for those who like a bit of heat.</p>



<p>Remember to adjust the heat level to suit your taste. Spices can be mixed up, but make sure you include something that has a bit of warmth for that authentic touch.</p>



<h3 class="wp-block-heading">Herbs</h3>



<p>While spices are important, herbs bring their own kind of magic. I use a combination of cilantro and parsley. I know some people don&#8217;t like one or the other. So up to you.</p>



<p>Every now and then like using bay leaves to add depth during the simmering process. Be very careful not to over do it as they will take control over the entire flavor.</p>



<h2 class="wp-block-heading">How to Make Tunisian Soup</h2>



<p>I&#8217;ll guide you through creating a delicious Tunisian soup with chicken and vegetables. We&#8217;ll boil the chicken first, then prepare a rich vegetable base, and finally, combine everything with spices and other ingredients. Here is a step by step breakdown. Keep in mind, you can make your own variation.</p>



<h3 class="wp-block-heading">Boil the Chicken</h3>



<p>Right of the bat, there are two ways to boil the chicken. The way I do is separated from the soup. You can do it inside your soup but it is very important to remove the foam from the top.</p>



<p>I start by bringing a large pot of water to a simmer. I then add the chicken pieces to the water, ensuring they&#8217;re fully submerged. I let the chicken boil for about 5-10 minutes on medium heat. They don&#8217;t need to be cooked through. They will cook with the actual soup. This is only to remove the stuff that comes out when you boil a chicken.</p>



<h3 class="wp-block-heading">Prepare the Vegetable Base </h3>

<p>While the chicken is boiling, I prepare the vegetables base. I dice onions, carrots, and celery. I like the onion pieces large as well as the carrots. But the celery I prefer to have small.</p>



<p>I heat a tablespoon of olive oil in a large skillet over medium heat, then add the vegetables. Stirring occasionally, I only cook them about 2-4 minutes. This step releases the natural sweetness of the veggies and develops a richer flavor for our soup.</p>

<h3 class="wp-block-heading">Add the Spices and Boil</h3>



<p>With the vegetables ready, I add a blend of spices to the mix. Paprika, turmeric, and cumin are among my favorites for this soup. They provide warmth and depth.</p>



<p>I sprinkle them evenly over the vegetables and stir to coat everything thoroughly. Cooking the spices with the vegetables for a couple of minutes enhances their aroma and flavor, ensuring each bite is deliciously seasoned.</p>



<p>At this point I realize I should have suggested you will eat something before you start cooking. Because the smell will start driving you crazy!</p>



<p>It is very important not to over cook the spices because they will burn quickly and you will need to throw away everything. So after 1-2 minutes, add 2 cups of water, mix well and let it boil for a few minutes.</p>

<h3 class="wp-block-heading">Add the Rest of the Ingredients and Chicken</h3>



<p>Now, it&#8217;s time to assemble everything. Start adding the ingredients one by one. Starting with the parsley, cilantro then the butternut and zucchini and last the chicken and the chickpeas.</p>



<p>Stirring them together, I ensure every ingredient is nicely combined. Add water until everything is covered with water and boil.</p>

<h3 class="wp-block-heading">Boil</h3>



<p>I bring the pot to a gentle boil over medium-high heat. Once it reaches a boil, I reduce the heat to a simmer. I let it cook uncovered for about 20-30 minutes, allowing the flavors to meld together.</p>



<p>Make sure not to taste the soup before the chicken is cooked (about 30 minutes). Adjust the seasoning as needed, adding more salt or other spices you feel are missing.</p>

<p>When the soup is fragrant and ready, I remove it from the heat. I ladle it into bowls, ensuring each serving has plenty of chicken and vegetables.</p>

<p>I grew up with a lot of Mediterranean food around me. </p>



<p>So sumac onion isn&#8217;t something new to me. But I feel like it is not getting the attention it deserves. </p>



<p>They have tangy and slightly sweet flavor and extremely easy to make. It is about 7 minutes of work if you really take your time and that includes the time of finding the right bowl.</p>



<p>Main ingredients are onions, sumac and salt with optional parsley, lemon juice and black pepper. </p>



<p>However, don&#8217;t get confused. This very short list of ingredients make a delicious and versatile topping.</p>



<p>In Turkish cuisine (the people who brought you the <a href="https://balancedkitchen.com/2024/06/simit-recipe-turkish-sesame-bagel/" data-type="post" data-id="1002496">simit</a>), sumac onions are often served as a side dish or as part of a mezze platter. </p>



<p>I find that the bold flavors of sumac and lemon juice wake up my taste buds in the best way. Plus, they&#8217;re quick to prepare and can easily be made ahead of time, which is always a bonus.</p>

<p>When I&#8217;m in the mood for something warm, I might stir sumac onions into a <strong>soup</strong>. They add a depth of flavor that&#8217;s truly unique.</p>



<p>Adding them to <strong>lahmacun</strong> gives the Turkish pizza a kick. The contrast between the spiced meat topping and tangy onions makes every bite exciting.</p>

<p>I am always amazed when I speak to people and they say that they never heard of Halloumi. </p>



<p>To me, that is the best cheese ever! I mean, what other cheese squeaks?  </p>



<p>It is so versatile and can be used and cooked in many different ways. When was the last time you had a grilled skewer of cheese. If you hadn&#8217;t, you have to. See below for recipe.</p>



<p>When it comes to cooking halloumi, I&#8217;ve discovered some fantastic methods that really bring out the best in this unique Cypriot cheese. Whether you love grilling, frying, or adding halloumi to salads, <em><strong>knowing the best way to prepare it can make all the difference.</strong></em> Not only is halloumi packed with protein and calcium, but its chewy texture and savory flavor make it a delicious addition to many dishes.</p>

<p>One of my favorite ways to prepare halloumi is by grilling it. The cheese develops beautiful char marks and a slightly smoky flavor when cooked on the grill. Grilling also keeps the cheese firm, making it perfect for sandwiches or as a topping for salads. Frying halloumi in a pan with a bit of olive oil gives it a crispy, golden crust while keeping the inside soft and delicious. Adding warmed honey or sesame seeds to fried halloumi can elevate the taste even further.</p>

Imagine tossing it into a vibrant salad with fresh tomatoes and cucumbers, or creating a veggie burger that’s both satisfying and full of flavor. <p>Most people think Halloumi was originated in Greece. However, Halloumi is a traditional cheese with a rich history tied to Cyprus. It was originally crafted using goat milk and has influenced many aspects of Cypriot culture.</p>



<p>Halloumi has been made in Cyprus for many centuries. Its creation dates back to the Medieval Byzantine period. Traditionally, Cypriot farmers would use a mix of goat and sheep milk to make the cheese.</p>



<p>The process involves heating the milk and adding rennet to curdle it. After straining, the curds are pressed and stored in brine for preservation. This method gave Halloumi its unique texture, making it possible to grill or fry without melting.</p>



<p>The cheese is often enhanced with fresh mint leaves inserted between layers. This not only adds flavor but also acts as a natural preservative. Halloumi’s ability to withstand high temperatures made it a versatile option for grilling and frying.</p>

<p>Halloumi is known for its high protein content, making it an excellent choice for vegetarians and those looking to increase their protein intake. An average serving size of 100 grams contains:</p>

<p>Picking the right halloumi is essential to get the best taste and texture. I usually buy my Halloumi from Costco but I know not all branches carry it. </p>



<p>Most areas have Mediterranean (or more specifically Greek) stores. This is where you will be able to find it.</p>



<h3 class="wp-block-heading">Texture and Characteristics</h3>



<p>When selecting halloumi, I look for a firm, slightly springy texture. Good halloumi should be &#8220;squeaky&#8221; when you bite into it. This squeakiness is a signature characteristic of quality halloumi. It indicates a high melting point, meaning it won&#8217;t melt away when heated.</p>



<p>Check that the cheese is not too soft or crumbly. Halloumi should be able to hold its shape during cooking. It often comes in a vacuum-sealed package, which keeps it firm and fresh.</p>



<h3 class="wp-block-heading">Storage and Freshness</h3>



<p>Storing halloumi properly is crucial to maintaining its quality. I always keep it in the refrigerator, where it can last several weeks if unopened. Once opened, I store it in brine or salted water. This keeps the cheese from drying out and preserves its texture.</p>



<p>For optimal freshness, check the expiration date on the package. Fresh halloumi has a mild, slightly salty taste and a clean, white color. Avoid any halloumi that looks yellowed or smells off. This could indicate that it is no longer fresh.</p>

<p>When it comes to <strong>cooking halloumi</strong>, there are a few methods I really enjoy. They make the cheese taste delicious and bring out its unique texture.</p>



<p>While you can eat it uncooked, I prefer to eat it cooked and Grilling is a favorite of mine. </p>



<p>Here are some several ways to make it.</p>



<p>They’re simple but elevate the dish. Try them out and see which one you like best!</p>



<h3 class="wp-block-heading">Halloumi skewers</h3>



<p>I absolutely love making halloumi skewers for BBQs and <a href="https://balancedkitchen.com/2017/05/my-favorite-summer-picnic-recipes/">summer gatherings</a>. This method is probably longer than the others, but I think they are still easy to prepare and always a crowd-pleaser.</p>



<p>First, I cut the halloumi into bite-sized pieces. I like to use a variety of vegetables on my skewers. Some of my favorites are <strong>zucchini</strong>, <strong>peppers</strong>, <strong>cherry tomatoes</strong>, and <strong>onions</strong>.</p>

<p>If you are interested you can prepare a simple marinade. A mixture of olive oil, lemon juice, garlic, and fresh herbs like oregano or thyme works great. Marinate the halloumi and veggies for at least 30 minutes. </p>



<p>I don&#8217;t always marinate and it still comes out great!</p>



<p>After marinating, I skewer the halloumi and veggies. I make sure to alternate between the cheese and the vegetables. This way, each bite has a mix of flavors.</p>



<p>Grilling is the fun part. I preheat the grill to medium-high heat. I place the skewers on the grill, turning them occasionally until they are nicely charred and the vegetables are tender. This usually takes around 10-15 minutes.</p>



<p>For an extra touch, I drizzle the skewers with a bit of honey or a honey-rosemary glaze just before serving. It adds a nice sweet and savory flavor.</p>



<h3 class="wp-block-heading">Grilling Halloumi</h3>



<p>Grilling halloumi is a great and quick way to enjoy this unique cheese. It has a high melting point, so it doesn&#8217;t melt away on the grill.</p>



<p>First, I preheat my grill to medium-high, around 400-450°F. To get the best results, I make sure to clean the grates well.</p>



<p><strong>Preparation:</strong></p>



<ol class="wp-block-list">
<li>Pat the halloumi dry with a paper towel.</li>



<li>You can leave it as large chunk or slice it into ¼-inch thick pieces.</li>



<li>Lightly brush each slice with olive oil.</li>
</ol>



<p>When the grill is ready, I place the halloumi slices directly on the grates. I let them cook for 3-4 minutes on each side until they get a nice golden color and grill marks.</p>

<p>Grilled halloumi is perfect on its own, in sandwiches, or even in salads. It’s super versatile and always a big hit whenever I make it.</p>

<p>Frying halloumi is by far the easiest way to enjoy this delicious cheese. While it’s quick and easy, it still brings out a wonderful golden crust while keeping the inside soft and creamy.</p>

<p>First, I start by cutting the halloumi into slices. I find that about <strong>1/2 inch thick</strong> works best. These slices hold together well and cook evenly.</p>



<p>Before frying, I pat the slices dry with a paper towel. This helps to achieve that perfectly crispy texture. A little moisture can make the cheese stick to the pan or splatter.</p>



<p>In a nonstick pan, I heat a bit of <strong>olive oil</strong> over medium-high heat. Once the oil is shimmering, I place the halloumi slices in the pan. I make sure they’re in a single layer to cook evenly.</p>



<p>I cook each side for about <strong>1-2 minutes</strong>. When you see that the slices are turning a nice golden brown, it&#8217;s time to flip them. I use a spatula to help with the flip and keep an eye on the crust to prevent it from getting too dark.</p>



<p>That’s it! In a few minutes, I have a plate of perfectly fried halloumi ready to be enjoyed.</p>

<p><strong>Grilled Halloumi and Vegetables Salads:</strong> I simple take the vegetables and the Halloumi I grilled, mixed them in a bowl with some olives, lemon juice, olive oil and some salt and pepper and you got yourself a great dish.</p>



<p><strong>Halloumi with Fresh Vegetables Salad</strong>: In this simple yet tasty salad I take the Halloumi cheese, grilled or not grilled it&#8217;s up to you. Mix it with fresh leaves mix or with cucumber, tomatoes, red onion, olive and some olive oil. I like to add extra coarse sea salt. It creates an explosiveness of taste in the mouth.</p>

<p>To my opinion, there are only a few dishes with such a high level of explosive flavors as the Chraime (or Hraime).</p>



<p>The good recipes (or at least those I find to be good), are spicy hot, lemon sour and garlicy. The secret is the balance between those three.</p>



<p>It can be served for dinner or as a first course in a festive dinner.</p>



<p>This traditional recipe, combines tender fish with a <a href="https://balancedkitchen.com/2016/06/how-to-make-jarred-tomato-sauce-actually-taste-good/">rich tomato sauce</a> infused with spices like paprika, garlic, and lemon.</p>



<p><strong>Cooking Chraime is surprisingly simple, and the result is a tasty meal that looks and tastes like it took hours to prepare.</strong> All you need to do is sauté some garlic, add in spices and tomatoe paste, then simmer your fish until it&#8217;s perfectly cooked. The sauce absorbs into the fish beautifully, making each bite a burst of flavor.</p>



<p>It is highly recommended to serve it with a lot of bread on the side to &#8220;catch&#8221; the sauce. My kids usually like my focaccia. </p>

<p>While I love using lime for my ceviche recipe, I always use lemon and only lemon for my Hraime.</p>

Tomatoes provide a natural sweetness and acidity, while roasted red peppers add a smoky, robust element. Together, these acidic components create a harmonious balance, making Hraime a well-rounded and flavorful dish.</p>

<h2 class="wp-block-heading">Cooking The Chraime &#8211; Step by Step</h2>



<h3 class="wp-block-heading">Marinating and Seasoning</h3>



<p>Before I start cooking, I take the pieces of fish and marinate them in a lot of lemon and salt for at least 15-20 minutes to let the flavors penetrate the flesh.</p>



<h3 class="wp-block-heading">Preparing the Sauce</h3>



<p>Preparing the sauce is very easy and can done in advance. </p>



<p>You need to sauté the garlic in a good amount of high quality olive oil. Make sure they are not burned. </p>



<p>When the garlic is ready, add in the cumin and paprika. At that point, the smell will drive everyone in the area of your house crazy! The spices don&#8217;t require more than several seconds in the oil so don&#8217;t over do it.</p>



<p>Add a cup of water and stir in the tomato paste.</p>



<p>Fix the taste to your liking with a combination of lemon juice, salt, black pepper and, hot paprika and a little bit of sugar for balance.</p>



<p>The sauce needs to be to your desired taste before you put your fish in. It will be more complicated to fix it with the fish inside.</p>



<h3 class="wp-block-heading">Adding the Fish</h3>



<p>You only need to place the fish in the sauce 15-20 before you want to eat. While you can heat it over again, it is less than recommended. </p>



<p>If you marinated the fish with a lot of lemon and salt, you can wash it off gently with cold water.</p>



<p>The sauce should be hot when you place the fish in but not boiling hot. </p>



<p>Cover the pan for 10-15 minutes and you are good to go.</p>



<h3 class="wp-block-heading">Serving</h3>



<p>Place a piece of fish in the middle of the plate with a lot of sauce and your choice of favorite bread to absorb it.</p>

<p><strong>Moroccan Hraime:</strong> This version often includes sweet peppers and may be slightly less spicy. Fresh cilantro or parsley is commonly used as a garnish, adding a burst of fresh flavor at the end.</p>

The beauty of this dish lies in its simplicity and the warmth it brings to any table.</p>



<p>Making Shakshuka is a comforting process, almost as much as it is to eat. It starts by sautéing onions, peppers, and spices until they meld into an aromatic base. Then tomatoes are added, creating a bubbling red sauce, perfect for cradling the eggs. It&#8217;s a recipe that&#8217;s open to interpretation, too; some like to add a kick of chili, while others prefer a milder heat, aiming to please a variety of palates.</p>

The basic elements of the dish – tomatoes, onions, peppers, and eggs – were brought together in a way that resonated deeply with the Maghrebi food tradition. </p>



<p>Fast forward to today, it&#8217;s a global phenomenon, particularly in <strong>Israel</strong>, where it has been heartily adopted and adapted into the fabric of Israeli cuisine.
